Which Casing type should I choose?

North American Hog Casings are ideal for making pork sausage, large frankfurters, italian sausage, bratwurst, smoked sausage, kielbasa, pepperoni, and rope sausage to name a few. Larger diameters of Hog Casings are used for specialty items.

Sheep Casings are ideal for breakfast links, pork links, cocktail franks, wieners, frankfurters, and cabanosa. Larger diameters of Sheep Casing can also be used to make chipolata, brockwurst, and landjaegar.

What is a Hank?

Casings are bundled into "hanks" which is the industry standard of 100 yards of casing. Once measuring is completed, hanks are then taken to be salted and eventually packaged in different options the individual customer prefers.


What is a Tube?

Casings are shirred and loaded on a plastic tube that allows for easy loading of casings onto the filling horn of sausage stuffers. Once on the "tubes" the casings are salted and eventually packaged and shipped to the customer.


What is the difference between "Made in the USA" and "Product of the USA"

Product of the USA is North American raw material shipped to China and other various countries for manufacturing and processing. Then shipped back to the USA under the "Product of USA Label".

What does Pre-Flushed mean?

Shorts are the fatty non-clear liver ends of the intestine. The quality and sizing can vary greatly. This is the waste that companies do not want to send to their large customers. At Syracuse Casing our Home Packs are the same great quality as our 100 yard Hanks and we do not sell you the "shorts".
